The Dark n Stormy

Oh dear.  I wasn't prepared for this little number.  As I was setting up this week's [Signature Cocktail] I realized I had never actually had one!  I was sure to rectify that situation. It was spectacular, I must say. This is a complex drink, even though it doesn't have many ingredients.  Traditionally made with Gosling's Black Seal Rum (no, not THAT Gosling) and ginger beer, you can substitue any spiced rum, but the darker the better.  I used Kraken, and really enjoyed the added vanilla notes. This drink gained popularity among sailors who experienced it during trips to Bermuda, so this would be a perfect cocktail to serve if your wedding has any sort of nautical theme!  Its worth noting that ginger beer has much more of a bite than ginger ale, and that is critical to this cocktail's success, so make sure you pick up the right kind!      

*2 ounces dark rum
*6 ounces ginger beer

Fill a highball glass with ice, and add ginger beer. Using a spoon, float dark rum on top. Garnish with a lime wedge.
